I'm going to be completely overhauling this roster, and I want to get rid of anyone who doesn't fit my play-style...which is pretty much everyone.

Everyone Year 3 and up are available for picks, and younger players can be had for picks as well, they just made be for a premium.

You realize you are going to cripple your cap with all those draft picks, right?

I'm fairly confident that I'll be able to manage the cap hits, especially considering I'm not going to be resigning many of the players on the current rosters to significant contracts.
